Biology Class Learns About Fermentation

The Central Georgia Technical College microbiology classes taught by Jim Robinson recently presented the results of their attempts to ferment cabbage at the first semi-annual Kraut Fest. The classes fermented cabbage to produce sauerkraut. Students learned many microbiology principles during the five-week experiment. Some learning objectives included basic fermentation, acid production and pH and Biotechnology and food processing. The class presented their results to instructors who served as judges. The project will be continued in the fall with Sauerkraut, cheese and homemade root beer.
